

“I felt like years ago if you had a bar with craft ice and cocktails, you were a step above everyone else,” said Stayer. A few meat dishes include a steak tartare topped with salsa macha and the pozole is a pork stew with hominy spiked with green chiles. A seafood cocktail currently includes shrimp and scallops bathed in lime juice before it’s tossed with a tomato broth. Instead, the team is drawing inspiration from Mexico and surrounding countries: Raw and roasted oysters can feature garnishes like smoked pork butter and pickled tomatillos.

The dishes, which Stayer says are meant to pair with agave-based drinks, are not strictly Mexican seafood dishes. For cocktails, Toasted Coconut’s Elena Vann is running the bar and there are about the same number of cocktails as dishes. A Mexican chef no longer runs the kitchen but Madalyn Lester, an alum of Nancy’s Hustle, worked with Stayer on the eight-item menu.
